Peru is a country with a history; however, to talk about Peruvian history not only involves being dazzled by the everlasting and imposing Machu Picchu, Cusco’s wonderful citadel, but rather, talking of millenary cultures such as those of Peru includes pointing to its gastronomical wealth, where you will end up being seduced by the majestic qualities of a cebiche (chunks of raw fish marinated in lemon juice, combined with pepper, salt, onions, sweet potato and corn), the generosity of a stuffed causa (mashed potato layers with lemon and yellow pepper, stuffed with poultry, seafood or avocado), or the exquisite sautéed beef (chunks of meat fried with onions and tomatoes), only to name a few of the delicacies featured by our culinary art.
Thus, there is no doubt that Peru is a country to be tasted. We are explaining the reasons supporting our culinary wealth.

First of all, our geography, which comprises 84 of the 104 life zones existing in the world, allows for an ecological and climate diversity to prevail in Peru. Because of this aspect alone, we are able to find an endless variety of products in Peru’s three regions.

Starting with the Coast, our resourceful seas provide a variety of fish and seafood, which become delicious dishes, such as cebiche, tiradito (a soft version of cebiche, with a cream made of yellow pepper or rocoto – and no onions), seafood aguadito (a fish and seafood combination in a green sauce), and other choice foods.

On the Highlands we can find Andean products, ranging from potatoes to quinoa and other products, which have at some time been used to support the world during times of hunger; and finally, the Jungle adds exceptional water borne delicacies and meats from hunting, which are normally accompanied by plantains and cassava.

We have the greatest variety of potatoes (over 3,000 of them); Peruvian corn has the largest grains in the world; there is an endless number of pepper varieties; we are the country with the utmost diversity of fruits (650), including sugar apples, lucumas and other fruits, which are highly sought around the world because of their quality and flavor. In addition, it is worth mentioning that many products native to Peru are highly important in the world.

For example, we can mention potatoes – what would the world be without French fries?; and tomatoes – what would Italian food be like without the famous pomodoro and the world without the delicious Bloody Mary.
The second reason supporting our culinary wealth is the fact that thanks to the mixture and overlapping of several cultures, it has been possible to create a blend of flavors, ingredients and styles, and this makes our food unique in the world.

Throughout the centuries, Peru has been affected by the Spanish influence in stews and soups, the Arab influence in sweets, the African influence in Creole food, Italian influence in pastas, Japanese influence in delicate fish and seafood dishes, and the Chinese influence, which is responsible for one of the most popular mixtures in the country: Chifa.

Our traditional “Cebiche” is a clear demonstration of the merger of Peruvian cuisine. The Spaniards brought the lemon and onions.

The Japanese brought the fish style, while it is possible for the gastronomical concept to have been acquired from the Incas, as it is said that they ate some sort of “cebiche” seasoned in chicha and other acidic juices.

Therefore, it is an established fact that Peruvian food contains flavors from four continents, consisting of Pre-Inca, Inca, Hispanic Colonial, Mulatto, European and Oriental roots.

This blend, plus the good skills of Peruvian chefs, further consolidate the prestige accomplished by Peruvian food all over the world.
